Rice flour crepe with salad chicken and tonnato sauce

Rice flour crepes topped with a refreshingly sour tonnato sauce.

Ingredients

  • Rice flour・・・45g
  • Sugar・・・5g
  • (cow's) milk・・・100cc
  • egg・・・1egg
  • Oil・・・small quantity
  • Salt・・・small quantity
  • 【Tonnato sauce】
  • ●Sliced onion・・・40g
  • ●Anchovy fillet・・・5 anchovy fillets
  • ●Olive oil・・・20cc
  • ●Tuna(Cutting oil)・・・140g
  • ●White wine・・・180cc
  • ●Mayonnaise・・・100g
  • ●lemon juice (ingredient)・・・15cc
  • ●Fresh cream・・・30cc
  • ●Salt・・・small quantity

How to cook

  1. 1.Combine all ingredients except ● in a bowl and mix well.
  2. 2.Let 1 dough rest in the refrigerator for 20 minutes.
  3. 3.In a greased pan, pour a thin layer of the batter from step 2 and cook on both sides.
  4. 4.Make the tonnato sauce with the ● ingredients.
    In a pan with olive oil, add onion slices and saute well.
  5. 5.Add anchovy fillets and oiled tuna to 4 and fry further, then pour in white wine and cook over low heat while skimming off the water.
  6. 6.Put 5 in a food processor, etc. to make a paste and cool.
  7. 7.When 6 has cooled, combine the mayonnaise and lemon juice, add more cream and season with salt to taste, and the sauce is ready to serve.
  8. 8.Wrap the crepe dough from 3 with your choice of filling (salad chicken, baby leaves, etc.) and serve with tonnato sauce.
