Rum-Scented Orange Peel Fluffy Financier

Chocolat financier with a fluffy texture. It is made to enjoy the fresh aroma of orange peel without burning the butter.

Ingredients

  • For 6 financier molds
  • A.Rice Flour・・・40g
  • A.Cocoa powder・・・10g
  • A.Baking powder・・・2g
  • B.Rum・・・4g
  • B.Orange peel・・・10g
  • Egg(M)・・・1egg
  • Sugar・・・30g
  • Honey・・・10g
  • Yogurt (unsweetened)・・・40g
  • Unsalted butter・・・30g
  • Chocolate for coating・・・5g
  • Dried orange slices・・・1 or 2 pieces

How to cook

  1. 1.*Cut B orange peel into 5 mm cubes and blend with rum.
    Combine A with the rum.
    Warm the unsalted butter in the microwave for 20 to 30 seconds to melt it thoroughly.
    Preheat the oven to 170℃.
  2. 2.Crack and beat the eggs in a bowl, then combine with the sugar, honey, and yogurt, mixing thoroughly each time.
  3. 3.Add A and B to 2, mix well, and finally add melted butter and mix thoroughly until smooth.
  4. 4.Use a spoon to evenly distribute the dough into the mold, and then tap the dough a little higher to release any air bubbles left in the dough.
  5. 5.Place on a baking sheet and bake in a 170°C oven for about 15 minutes.
  6. 6.If desired, lightly brush with chocolate for coding and garnish with dried oranges.
    This recipe contains honey and should not be given to children under 1 year of age.
