Vegetable-filled suudon with dumplings made from rice flour.

Ingredients

  • For 4 persons
  • ●Rice flour・・・50g
  • ●Starch・・・8g
  • ●Salt・・・small quantity
  • ●Boiling water・・・45cc
  • Shiitake mushroom・・・2-3 pieces
  • Radish・・・300g
  • Carrot・・・70g
  • Bamboo shoots (boiled in water)・・・30g
  • katsuo soup stock・・・800cc
  • Soy sauce・・・proper quantity
  • Sesame oil・・・small quantity
  • Green onion・・・small quantity

How to cook

  1. 1.Cut shiitake mushrooms, radishes, carrots, and bamboo shoots into bite-size pieces. (cut into small cubes or chunks)
  2. 2.Put 1 vegetable and bonito broth in a pot and simmer until daikon and carrots are tender.
  3. 3.While the vegetables are cooking, make rice flour dumplings with the ● ingredients.
    Combine all ingredients except boiling water in a bowl, add boiling water at the end and mix lightly, then roll into bite-sized dumplings by hand.
  4. 4.Add 3 to 2. When cooked, season with soy sauce.
    Chicken broth, etc., is also delicious.
