Lemon Pound Cake

A refreshing lemon-flavored pound cake made with rice flour pancake mix.
Ingredients
- Rice flour pancake mix・・・100g
- Egg・・・1egg
- Butter・・・50g
- Sugar・・・40g
- Lemon peel・・・1piece
- lemon juice (ingredient)・・・1tbsp
- 【Lemon icing】
- ●Powdered sugar・・・70g
- ●Lemon juice (ingredient)・・・1.5tbsp
How to cook
- 1.In advance, grate lemon zest and bring butter to room temperature.
- 2.In a bowl, combine butter and sugar and mix with a spatula until white.
- 3.Add eggs to process 2 and mix well.
- 4.Add grated lemon zest and lemon juice to step 3. Add the rice flour pancake mix and mix with a spatula until smooth.
- 5.Pour the dough into the molds and bake in the oven at 170°C for 30 minutes. Remove from oven and allow to cool.
